Today, I made CASTELLA from Taiwan for everyone. I made it many times until I was satisfied.

Material Science:

100G cake flour
100G unsalted butter 
100G milk
100G sugar
6 eggs
1 teaspoon vanilla extract

  • Step1: Heat the butter to 50 degrees and mix it with the cake flour in a bowl while the butter is heated. After mixing evenly, it looks like bread dough, but adding egg yolks will make the dough soft, so there is no problem.
  • Step2: Mix 6 egg yolks with flour
  • Step3: Add 1 teaspoon of vanilla extract
  • Step4: Mix 100G sugar and 6 egg whites evenly
  • Step5:Add the dough all at once and mix it with a mixer
  • Step6:Use a cake mold of 18CM and wrap it with aluminum foil to prevent water from entering. Place parchment paper on the pot and pour the dough into the cookware. Place the entire pot in a large plate and add 80 degree warm water to the plate
  • Step7: Bake in the oven at 150 degrees Celsius for 60 minutes
